Xen Virtualization

Alright, so I'm currently working on setting up virtualization of Windows and Linux through Xen.
To help with this process I've bought a second graphics card, so that I can run Linux & Windows at the same time.

I'm almost ready to "dig in", but I need a few questions answered first..

1) I assume that 6 cores is more than enough.. (1 : Xen, 2-3 : Windows, 4-5 : Linux : 6 : Unassigned)
2) How would I setup the graphics portion? More info below..

I have one graphics card in use right now, and another in the mail to be used.
Ideally I'd be using one for windows, one for linux, and have xen running non-graphics.
How do I achieve this? (What I have pictured is like if windows were running as mint, and when you hit Ctrl-Alt-F1, you would get Xen)

3) How are the mouse and keyboard managed through 2-3 machines (1-2 virtual + xen)?
