I found two packages in synaptic for this. fortune-mod and fortunes-min I bet you could just uninstall these.

nope.. what you really need to do is to remove the call to /usr/games/fortune in /etc/bash.bashrc

I had this same issue and hated it. But, lucky enough, it was quite an easy fix! This issue will hopefully be address in the next version of mintDesktop (there will be a HowTO guide to help remove it)
