This is what my source list looks like

Is that correct for update pack 7?

I'm not sure, because i don't run LMDE with latest or incoming repos, but the sources.list should look
like this:

deb http://packages.linuxmint.com/ debian main upstream import
deb http://debian.linuxmint.com/latest testing main contrib non-free
deb http://debian.linuxmint.com/latest/security testing/updates main contrib non-free
deb http://debian.linuxmint.com/latest/multimedia testing main non-free

I have not changed the repos from the initial install, why would they be different?

i have not heard about the repos were changed to your castrated version and everywhere i look
around, the version i posted is the recommended. I don't know why your list looks as cut.

My bad Gerd50, I was looking at the truncated list in the update manager. My source list is just as you posted it should be.
