Pausing a recording with Ctrl-Z

I need to make special .wav recordings which can be created with this command (followed by some file name) in the terminal:

arecord -f S16_LE

The problem/mystery is that Ctrl-Z appears to pause the recording, and the fg command appears to re-start it just fine, but the final recording only contains material prior to the Ctrl-Z being entered. Nothing after the fg is recorded.

If I'm making an hour-long recording, and get interrupted, the ability to pause and re-start is essential. Everything I can find suggests that this should work, but it doesn't. Anyone got a spare life-preserver they can toss me?

Using LMDE (Gnome, 64-bit, latest) if that's relevant.
