Email Server

We have a number of computers in our household. I'd like to use one computer to perform the following functions:
  • perform the role of a an Email server
    perform the role as a media center - family viewing monitor will be attached to it.
    perform the role as a web server.
My immediate goal is to set up the email server. Can anyone provide me steps on how to do so? I really believe that there are other people with similar interests. Once I am able to setup a server, I plan on purchasing an atom type computer (mini itx form factor) to perform these services. These tiny but powerful computers can use as little as 19 watts. This appeals to me as I would like to have this system on 24/7.

Should I be concerned about using LMDE. Should I use Debian Stable? Thoughts?

There are many choices. I'd like to find one that will work for Linux Mint Debian Edition (LMDE).
I would like to avoid making an error of choosing a means that won't work for me.

My goal is to use Mozilla Thunderbird to log on to my Email Server from any system in the house.

Ideas?
