Customised Distro

Don't know if this the right place to put up this question / thread, if needed then please remove or move the thread.
What I want to know is how to make a customized distro based purely on Debian (though i am a suse guy but would want to try debian) and not Lisa / or LMDE.
My target are two things : HAVE ALWAYS USED SUSE for mailing soultion.
1 ) A Mail server (Qmail + clamav + simscan + spamassassin )/ Squid (junk filtering ) / Firewall.
2 ) An Audio / Video editing / processing system
Both of the above would be two different distros.
So if any one knows what is the procedure then please let me know. I have used LFS but that was years back and don't to take the same route.
I have the Debian 6 (net install) installed under LMDE (Virtual Box).
