Bundling of Adobe Acrobat Reader

I think its good that Mint comes with the ability to handle non open formats such as Flash, MPEG4 and WMV, but why not include Adobe Acrobat Reader so that PDFs can be viewed in the web browser. Currently you have to open them separatly which is a pain.

There are pdf plugins/extensions available for various browsers

Adobe isn't the only name in pdf format readers/writers available..
As for Abobe pdf reader, there are smaller/faster pdf readers available, that don't need all that extra/internet linking to be functional: that is open the pdf file and view it on-screen.

fair enough bundle one of those then, but I think the ability to read PDFs in the browser would be a good addition

Another point to note is that the team of Firefox is working on building their own PDF reader. It seems promising! :D
