Grub 2

I have been over and over the Grub 2 tutorial and can't help but be amazed at how different the config options are, than Grub was. I am having a hard time figuring out how to change the default OS for boot as well as the timeout variable.

Can someone point me to a more clear either tutorial or command list for Grub 2?
