I'm undecided about this or Ubuntu for a system I'm putting together. It looks like only the Ubuntu server supports RAID 1.
Does Linux Mint have any reasonably friendly or well documented way to set up a RAID?

Anything you can do on ubuntu server, you can do on mint. The only difference between all the ubuntu editions is the default setup, including packages.
