Questions about Grub, UEFI,the liveCD and the installer

Gloria 7 works like a charm for my old Intel 845. However I have recently installed GRUB2. I can't see any advantages, though there are probably many, but since it is going to be a default in future, I thought I had better try it. initially there are no problems even though i preferred the look of the Gloria 7 boot screen. However, with GRUB1, I used to be able edit /boot/grub/menu.lst to re-arrange the sequence of booting options (I also have Ubuntu 9.04 installed). This doesn't work with GRUB2. Does anyone know how I can do this?
I have managed to change the rather short 5 second time-out delay to 10 seconds but that's all.

so you shouldn't edit menu.lst, see also http://grub.enbug.org/grub.cfg
