Seems like whatever I do I still have Grub2 in the MBR of sda and grub0.97 in the MBR of sdb, and it's Grub2 that boots.

I'm a partitioning freak. But /boot is sda7 and XP, Mint and Mint FB are all on sda. 
Not quite sure what's going on with your partitions on the second drive, but in relation to your problem it doesn't really matter, although you seem to have grub legacy in the MBR and another(?) boot loader in sdb8?
