There are a number of ways to go about it but one of the easiest is to use the Ubuntu alternate install disk. There is an option on the first screen that allows you to fix a broken install. It may not give you the mint splash though. I think, since Mint uses the same installer, that the Mint disk has this option too but don't quote me on that.
If this doesn't work out you can always do it manually. It is just a bit more complicated though.
