I was wondering if there is a way to install this from Ubuntu. Something similar to how you can add OpenGEU to ubuntu by adding some repositories and installing the OpenGEU-desktop. Can this be done and if so how?

Is there a way to install Mint from an already installed copy of Ubuntu? Somthing along the lines of apt-get mint-desktop. Similar to the ways you can install Kubuntu, OpenGEU etc since Mint is built off Ubuntu.

No is the short answer.
The reason is (not only) that Mint forked off Ubuntu Edgy with Barbara and has evolved separately so the code base is slowly getting different
