Anybody have any experience in using a modem on a Mint machine and using it like a fax server?

Fax server? You mean sending and receiving faxes through a modem, or do you mean you want this computer connected to a local network and be able to send faxes from other computers on the network to this one?

For the former, perhaps searching also for solutions on Ubuntu will help. Here is one hit for sending and receiving faxes: https://help.ubuntu.com/community/DialupAndFax

I wonder... don't know for sure, but I wonder. If those instructions would work for Mint. Mint's easier to hook into a Windows network.

Linux Mint is based on Ubuntu, so yes that will generally work. Unless you are using LMDE and posted here by mistake

Ideally I'd want other computers on the network to be able to use the computer to send faxes out through the modem.

Sounds like HylaFax is the one to look into: http://www.serverubuntu.it/node/8

But research it some more, there is probably a more up-to-date for using HylaFax.
