I suggest using the non-free version of virtualbox. I seem to recall seeing the nonfree version in the Mint7 repo's - but I might be mistaken. If I am mistaken, here are the install instructions -->

Can you be a little more specific about the crashing.
Do you actually get to a running VM before it crashes? any particular application or series of steps you can follow to replicate the crash, or is it seemingly random?

Get rid of the VB you have and install this one.

See if you still have problems.
