How do I stop Icons appearing over multiple desktops? I'm sure I've seen the toggle before, somewhere?

Not yet possible using Gnome, Nautilus, Metacity and Compiz, but the feature has been requested any may be available in future versions of Gnome. I think it can be done now by using "devilspie". It is available for download and there is a Google GUI extension for it, but you will have to set things up correctly. A bit of a hassle for icons that I despise anyways!

Maybe I'm over analyzing the question, but am II right in understanding that you just don't want icons on your desktop? At all? Of any sort?

The solution is actually quite simple: Just don't put any there.

To get rid of My Computer, Trash, and any mounted volume icons, hit alt+f2 and enter "gconf-editor". Navigate to apps>nautilus>desktop and untick Show Computer Icon, Show Trash Icon, and Show Mounted Volumes.

After that, you should have a clean, iconless desktop.

If I understood your question wrong, disregard anything I said and wait for another reply.

Thanks both. Optimize Me it must be my phrasing, I would like different sets of Icons on different desktops, otherwise I don't see the point of multiple desktops or workspaces at all.
