I don't really understand the question, if you have files that are empty, then they are empty, you can't magically fill them with data if you don't know what they would have contained..

gedit>edit>preferences>editor[/]

• [x]Create a backup copy of files before saving
• [x]Autosave every [10minutes]

Press Alt-F2
Type gconf-editor
Go to /apps/gedit-2/preferences/ui/recents
Change the default value from 5 to 20
