Disable/Remove HDMI Sound ??

OS: Mint 13 Maya / Mate
My motherboard has onboard Intel Audio. In addition to that, I have an nVidia G-Force video card with HDMI output and a HDMI enabled monitor.
The problem is that sound preferences will randomly default to HDMI Audio stub. ALSA mixer reveals the onboard Intel Audio is default (0) and selected.
I've tried changing the preferences in every software sound application to force onboard Intel Audio and STILL find that HDMI will be randomly selected.
I EVEN have HDMI Audio stub disabled (OFF) in "Sound Preferences" via right click on the sound volume icon in the desktop tray and HDMI will somehow randomly become enabled and used.
I'm also running "Wine" and find the same audio anomalies and issues there, as I am experiencing in Linux Mint.
Is there a way to disable and completely remove the HDMI Audio stub or somehow make HDMI sound not usable/selectable by software applications??
