How can i disable that new ugly gnome programs design and get back to the old one ? http://blogs.gnome.org/nacho/2014/01/15 ... -new-face/ Is there a way to do it for all gnome programs ? Or this is the end for gnome and cinnamon?

Rants go in open chat, not in support forum. You may not like where GNOME developers are going, but yes that is how GNOME applications with client side decorations (CSD) look in the latest version of GNOME. Linux Mint ships an older version of Gedit, so that's not a problem for you. As Linux Mint for the next two years will be on the current stable base of Ubuntu (which also has older versions of all GNOME software), these changes from GNOME aren't arriving on Linux Mint for a long while. In 2 years time Linux Mint will switch to a new stable base, though you can continue to use Linux Mint 17 for next 5 years. A lot can change in two years.

If you have installed any applications yourself that are using CSD, then there isn't much you can do about that except look for alternatives if you really can't stand the look of CSD applications. http://alternativeto.net/?platform=linux may be useful.
