Editing the Main Menu

I've just installed Mint 14 (Mate) having had enough of Windows 7 and am enjoying my experience thus far.

I can't claim to be a total newb to Linux as I've run ubuntu, among other distros, before; trying to find something I could use instead of XP. As you can probably guess, the first try at dumping Windows failed...

I've installed all sorts of Window Managers since installing Mint and I like some features of all of them and dislike others. So I've settled on Mate but want to change the Main Menu if possible. Now I am not talking about selecting what applications show or don't show. I am also aware of the 3 menu options Mint provides - I've settled on the Menu Bar - gnome I think is the provider. What I want to do is edit the Applications Menu of the Menu Bar to make its layout more like mintMenu with it's Favorites Panel and Applications Panel, but dropping the Places and System Panels. I also want to change the Application Category display to use the Sub-Categories for example /Game/Logic/Game Name as I found in one of the other Menu's I have installed and removed - not sure which...KDE I think.

Is there an Application what will allow me to do this, or is this something that will need me to get into editing config files etc...I have no problem coding if someone can point me in the right direction.

Thanks Viking777 I'll have a look at the stuff...think I'll have to learn Python to get into it though :lol:

In the meantime I've got my hands on USP2 Preview 5 which looks interesting, and I've also found the gnome library Administrator Guide that covers menu editing; which I'm going to give a go first.
