Here's my two hard drives saved MBR and partition tables, starting at the partition area. Everything above that being the MBR is the same, only at the partition area does it begin to change. GHex sure is a lot easier to use than Debug was in Windows! I suspect your UEFI computer was downgraded from the intended W8 to install W7 on instead. I just backed up the first 1kb instead of only 512b, so there's more than normally would be seen following the GEOM partitioning area.

I installed the latest version of Chirp on a friend's laptop which is running Ubuntu 12.x. Followed the instructions here:

Starting to see what happened...
The computer is UEFI capable.
It boots in legacy.
It boots the hard drive in legacy.
But, when you boot from a USB stick, it boots UEFI. If you install from a USB stick, then it boots THAT OS UEFI.
Oh, I forgot to mention, if you boot from CD/DVD, it boots legacy. So, if you install from CD/DVD, the resulting OS boots legacy.
So, trying to install Cinnamon from USB made dual boot install impossible (where I made my mistake and accidently formatted the drive).
But, installing from a DVD, Cinnamon was installed right along side Windows for a dual boot environment.
If I would have known...
So, THANK YOU for everyone that helped, shared links, and put up with my frantic situation. Thank you for the links too.

I finished picking through the 19.8GB that PhotoRec recovered... I equate it to pouring out 50 lbs of unassembled Lego bricks on the floor and saying "Here's your toy back, kid". There's all kinds of files and drivers, little icons and pics from programs and music albums, but they are all useless. I won't call this a complete loss though. That hard drive is still out of the computer and I'm using a different one in the machine now. So I need to acquire an enclosure and turn it into and external drive- the drive is 1.5TB.
I guess we'll call this one "solved".
