I would suggest you ask this question on the Ubootin forum. I suspect this is related to the graphics driver/usb flash setup, but I don't have a fix for you that I would have any confidence would work with Ubootin.
Your other alternative would be to make a proper hard drive install independent of Windows. Use the latest stable version of Gparted live cd iso to shrink your Windows partition and install in the space you freed up. Be sure you defrag your Windows install before attempting this. Don't shrink your Windows to less than the maximum size you expect it to become plus 20%.
