For most of what you want, you can right-click on the panel.

First, right-click on the bottom panel and choose Properties. For Orientation, choose Top. That will put most everything up on the top just as in Ubuntu and standard GNOME.

Right-click on the panel and choose New panel. This will add the bottom panel. You can then right-click and add what you want. If you want to move anything, right-click what you want and choose move.

If you wish to change the mintMenu to one of the other two, right-click on the mint-Menu icon and choose remove. Then right click in the spot you want the new menu and choose Add to panel. You can choose from the regular GNOME or a customized GNOME menu.

Quickly enough, you can have your panels customized exactly the way you want them. Have fun!
