How to select default apps to open programs

I've noticed lately when clicking on a .pdf file to open, it opens in GIMP! It used to open a pdf reader like Evince. How do I get it to open with Evince again?

Also: How would I get a DVD to open with kaffeine instead of totem? I don't mind totem, but there are no controls to look at the DVD menu or other options on the DVD.

I would say: right click with your mouse / open with other application .... and mark the "use as default..."
