Yes, you can install Xfce and then log into either GNOME or Xfce.

In my experience I would recommend doing it the other way around though...

I hope I understood the question correctly. If you have Linux Mint, which comes with GNOME by default, you can then install and use Xfce, and you'll be able to log into either GNOME or Xfce.
