Welcome to Mint.
When you install Linux you need to partition part of one of your discs to accommodate it( I would recommend the second drive ). First defrag the drive and then using the live cd make the NTFS partition smaller. You need at least 10gb for the operating system ./ 20gb for the /home partition and a swap drive of twice the size of your ram. All these partitions need to be formatted as ext3. During the install use the manual option to point the system to the partitions you wish to use. Once Mint is installed you should be able to access any data on the NTFS drives. I actually have a FAT32 partition for any data that I wish to access from multiple linux distros and windows but I do not think you will need to worry about this. Across my network I am able to open files on another windows machine that has two drives one Fat32 and the other NTFS.
