Try booting in recovery mode. You will get a menu with several items on it. One will be "xfix". Highlight this choice and press enter. When the program has run you will be prompted to resume normal boot. Press enter and Mint will boot normally; hopefully with normal resolution restored.

If this doesn't work (and it occasionally doesn't) post back and we will see what else we can try.
