If, and that could be a big if, you can boot from the ESATA drive by selecting it via BIOS then you shouldn't have a problem. When you install, on the last page before you actually start the installation, you can select where to install Grub. Install it to the mbr of the external drive. Probably sdb, if you have only one internal hard drive.

Then, when you boot, select the external drive to boot and you should be good to go.
