If you mean to set VLC as the default player when you watch a DVD, go into Nautilus (the file manager), and go to Edit, Preferences, Media, and then choose VLC as the default app to use when inserting a DVD.

If you want certain type of files in VLC, right click on any file of desired type, say mp3, go to Properties and select Open with tab and check the radio button with VLC.. Hereafter all mp3 files will be opend in VLC.

You can repeat tis for other type of files too..
