Help with themes

First of all, great dist keep up the good work i really like Mint. Im really new to Linux so my question is:

When i dowload and install a theme from gnome-look.org i doesnt change the things i want it to change.
Like the "Headmenu", it still has white background and the black theme's color when you point the mouse at an app, it doesnt apply the theme to the whole Headmenu and it ends up half done :) But the theme apply to everything else
but not the Headmenu :(

How do you apply the theme so it doesnt look so strange?

After that

What do you mean with "headmenu"?

Is it Mintmenu???
