I use Amarok with a 5th generation iPod. It works great other than not dropping the "the"s from the artist's name (ie the Doors are listed under the "T"s). Mounting and unmounting have not been a problem.

You should try Banshee...it looks a bit similar to itunes and works great with my color ipod (pre-video version.) You will have to install gstreamer to make your AAC's work. Here is the code that worked for me, do this after you install Banshee: (try removed for a newer version than synaptic if you're using Celena or previous)

$ sudo apt-get install gstreamer0.10-plugins-base \
gstreamer0.10-plugins-good gstreamer0.10-plugins-ugly \
gstreamer0.10-plugins-bad gstreamer0.10-plugins-ugly-multiverse \
gstreamer0.10-plugins-bad-multiverse gstreamer0.10-ffmpeg

BTW Banshee puts The Doors in the T's too. Oh well.
