You should use mintUpdate and then you get the right headers

Sorry for bothering. I had some problems with mint update that just got solved http://www.linuxmint.com/forum/viewtopic.php?f=17&t=9629&p=60339#p60339, so now it should be fine.

So when updated the kernel which of the following should be checked and then installed?

linux-headers-2.6.22-14
linux-headers-2.6.22-14-generic
linux-image-2.6.22-14-generic
linux-restricted-modules-2.6.22-14-generic
linux-restricted-modules-common

Do like Husse said. Use "Mint Update" instead of "synaptic" and install the files that are checked there for you.
