I believe for open office to display icons you must select HUMAN/Ubuntu/Elyssa from the icon set theme.

This is a problem between Open Office and black or dark themes (at least certain ones).
To solve, search open office style. By default only "openoffice.org-style-human" is installed. What I do to fix it is install the other styles.
Word of warning, though...if you're using those certain dark themes that open office doesn't like...you'll ONLY be able to use the "hi-contrast' icons.
