I think this is a simple matter of booting into Ubuntu then telling grub which partition to look on for the boot menu. I did it recently with different partitions on the same drive when I had a similar problem but have not tried it with different drives, so I suggest you wait for someone more experienced to respond. If they don't I will give you my two pence worth with no guarantees.
The other option I think is to manually add Mint to the Ubuntu boot menu.

The simplest solution is to copy and paste the lines about Mint in menu.lst from Mint to Ubuntu. Just simple.
