It's very well known I think all mac mini versions, including the 2009 version have sound compatibility issues with Ubuntu and probably other distros too. The Mac Mini's audio jack lights red, when I presume there are no drivers installed for sound (this is true when in Windows initially). In Ubuntu there's no such red light and it appears as if everything is working. The sound actually works when Linux Mint / Ubuntu is booted up from CD drive, but once booting from proper installation that's when it stops working.

Right now sound works for my Intel Core Solo 1.5GHz Mac Mini (in Linux Mint only), but it seems sometimes when I listen to music (flash) via YouTube for instance, a couple of times everything has froze and from this point the Apple Keyboard's LED Caps Lock light no longer lights up and so CTRL + Alt + Backspace doesn't work. I always have to hard reset using power button. I have also listened to a .mp3 music file, and although it has never froze like it has happened a few times while listening to music via YouTube, it has become slow (i.e. the music has become jumpy sometimes).

As I suspected it is Intel all the way (almost)
This means you have Intel HDA sound
and it is very probable that the standard solution for all kinds of problems with HDA works
You change model to what ever you have or auto or some more exotic model like in this topic
You may have to try many different "models" to get it to work - brand or model ...
Note the link to a post in the Ubuntu forums for a list of "models"
