I have dual monitors and would like to have the same background but not spanned across both. How would I go about setting this up? Thanks!!!

Hello, and Welcome to Linux Mint. Since when you set up dual monitors that way, mint has no knowledge of the difference between that and a super widescreen desktop, the way to do what you want is to open the wallpaper in gimp, resize it to your first display, then open another copy and put it to the side, resize it for your second monitor, save and apply as background.
