I ended up downloading the generic Linux version (.tar.xz) and running it. I needed to install xcb-xtest0 but after that everything is working fine.
I don't know why the flatpak version crapped out, but the latest one from Zoom's site is working fine.

I'm tangling with this same issue as well. It seems I can start a meeting from Zoom, and after maybe 30 seconds it'll connect and show video, but if I either launch the app from a link or join someone else's meeting manually, it just hangs indefinitely.
I ran but didn't see any errors or other odd messages. I have kernel 5.8.0-38-generic and Linux Mint 20.1 with the MATE desktop. I'm an absolutely Linux newbie so any nudge in the right direction would be much appreciated!
