I was wondering if there is a good Mac OSX-like Dock that would be easy to install on LM...

Best one is already installed. Start up Gnome-Do, go to preferences, and change the theme to Docky.

Also, might try Cairo-Dock (it's already in the Repositories)
Cairo is the same Dock that Mac OSX and the new Windows 7 use . . .
