Which version of Mint are you using? It is done differently in different versions.

Go to Menu=>Preferences=>Appearance=>Theme=>Customize=>Pointer. There are a few options listed by default. If you want more pointer options, Google "Gnome-look.org" and select "X11Mouse Themes" from the left side menu.

Find a pointer theme you like, download it to your desktop and(for most themes) drag the package into the Themes window in the Appearance utility. This will normally install the pointer theme and it will be available under Customize=>Pointer.
