I don't know how well known this is so i decided to add it here.
I had a problem with a dark theme and mintMenu.
With the dark theme it was very hard to see the text.

Changing the setting:
Right Click on mintMenu and Click Preferences.
Now uncheck the box next to use_custom_colors.
Right Click on mintmenu and click Reload Plugins.
