I don't know about the newer versions but the older versions of Mepis had software that allowed you to reinstall grub and it worked very well. Is there anything like that for Mint?

There is something that can help you, on the Dedoimedo's tutorial on the June 2010 update you have a small tutorial on how to create a GRUB 2 rescue CD for you installation:
