Stable repos

I have started to use LMDE. I like the idea of having a rolling distribution.
I have a desktop computer that I want to be as stable as possible.
If I want it to be rock solid, is it enough to change 'testing' to 'stable' in the repos, before I do the first update?
If I change it to 'stable', will receive any updates at all?

If you change the repo name from "testing" to "stable" it will stop any further updates. Your system will be frozen in time, so to speak. This would really only be a good idea if you never plan on installing ANY software in the future, otherwise you could end up with huge dependency problems.

But is 'testing' stable enough? I see that some replaces 'testing' with 'squeeze'. That's the difference between 'stable' and 'squeeze'?

Testing is fairly stable. Most of those using squeeze changed their repos over back when squeeze became stable in February. If you want to use squeeze, you should install the December or January LMDE release, set the repos to squeeze, and update from there. It is very difficult to downgrade to squeeze this long after it's stable release.
