There's no addicional drivers, so how do I do it?
The version Ubuntu offers me from Jockey is 310.14

The latest I've seen by x-swat team is 304.64 I don't believe jockey would have offered you 310 don't think it's been released yet.
If you want the latest driver compiled by the Ubuntu x-swat team you'll have to add their PPA to your repository list.
you can do that by going to the following page and following the instructions there:
http://www.ubuntuupdates.org/ppa/ubuntu-x-swat
then you can install the latest from them either by jockey or teminal or synaptic.

Additional drivers is part of software sources now (or so I am led to believe, for reasons I won't go into software sources doesn't run on my computer so I can't check this out).

Ppas are very outdated, there are 313.x already. Jockey offers 310.14 on Ubuntu as the latest "experimental". I'll give manual install a shot

310.14 is the latest available via the mint repositories.

I'm not sure if this is what you are looking for, but it worked for me.
Call up the Synaptic Package Manager
Search for boinc-nvidia-cuda
Select the package for downloading.
Click on Apply.
