I also want to know what input method is recommended for Chinese. I started trying to SCIM but I can't seem to get it to use Chinese. I seem to be missing a step. I also saw the outdated (and useless) Ubuntu SCIM page. Unfortunately, on the Linux Mint website I don't see any documentation at all for foreign language input.
That is good advice. I had no problems with ibus. After installing it and the appropriate input method (in my case, ibus-pinyin for simplified Chinese) it worked. I would encourage anyone to give up on scim and go with ibus. Although there is no reference to Mint Linux (check ubuntu), this web page was very helpful: http://pinyinjoe.com/linux/ubuntu-12-chinese-setup.htm 拼音舟的网站很棒！
