I've solved it!
Ran apt update and then apt upgrade

All is now fine!

Good news!

I decided to bite the bullet and do all updates for the last couple of months.
PROBLEM HAS DISAPPEARED

So something in one of those 50 odd updates must've been a bug fix for this ACPI problem.

That would be a difficult thing to do and prove because I have a wireless mouse that doesn't always appear until I've removed and re-inserted the USB dongle for it! Even on a normal boot from cold when the PC has been turned off all night, sometimes the mouse is frozen until I unplug & re-insert...

Thanks @Maxwell-J it was worth a try, but no that didn't work.
It caused the system to drop down into some weird command prompt instead of booting :

BusyBox v1.30.1 (Ubuntu 1:1.30.1-7ubuntu3) built-in shell (ash)
Enter 'help' for a list of built-in commands.

Yeah, I did a clean install of 20.0 Then I updated most things apart from the AMD64 microcode update and an intel microcode update as I thought that's the processor on a sony vaio But it wasn't either of those as the problem still returned. Yeah, there are a few drivers available, and I've noticed over the past few months they've been updating them all quite regularly, which is a pain as I'm on a very slow internet connection and they're all massive!

Does anyone know which system updates might affect the ACPI errors I'm getting?
I could load a version of mint and update everything apart from those updates, but I'd need to know which ones they are.

Hmmm Looks like I'm going to have to give up on Linux Mint on my laptop. That's a real shame.. It's been perfect for all these years... I went back to 20.0 and it initially worked fine, but then I did updates and bang the problem returns... So there must be a Linux Mint update that covers all versio...

No, that didn't work I'm afraid...
Still getting almost random times when it just doesn't recover from suspend.
