Ubuntu uses Unity desktop now and Mint uses an upgraded Gnome along with some other desktop variants, but not Unity. Right. I understand that a big difference is that Mint uses a different desktop environment, but it there any major difference besides that? Would my experience be virtually the same...

Clonezilla is a good friend to have. Just Google it and download and burn to disk. Use this to backup partitions to a usb disk. Yes. This version/desk is new to all at this time and the defaults in the update menus were for level 1,2, and 3. So stick with what was de default on the upgrades.
