/var/log/ being in tmps was indeed the problem for the journalctl commands. I commented out these lines in my fstab, created /var/log/journal directory accessible to systemd-journal group, rebooted twice and now these commands return logs. It's 24MB and contains mostly unreadable characters. However I found the string '/usr/lib/vmware-tools/sbin64/vmtoolsd -n vmusr' inside it which is pointing me in the right direction. Thanks!

That explains it partially, thanks. But I'm still waiting on someone to explain to me the "strange gui stuff" :D

EDIT: I've now manually changed the network config via /etc/network/interfaces and that works just fine.
