The ISOs are built from scratch. The ISO maintainer does this but if he uses any scripts for it, I don't know that these are public.
What does "built from scratch" mean?
Compiling the source for all the packages?
Or using debootstrap in a chroot then using apt to add the packages to it?

How Is The Mint ISO Created?

I've looked at several of the repos in GitHub but I can't seem to find the scripts that build the distro and creates the ISO.

Can someone point me to the scripts and/or give a high level overview of the steps.

All the applets I tried out seemed to agree with you, then I installed Icing Task Manager and it seems to have done exactly that.

I'll have to look closer into here to try to work out how it was done.

I don't want to have About/Configure/Remove in the context menus for the applets. I would rather just have applet specific menus there and control the configuration and removing from the Control Panel. Is it possible when making an applet to hide the default context menu? The panel is the right size it is just the icons within it that appear too small.
If I let Cinnamon scale icon and text the icons look a bit better but then the text looks too big.
Is it possible to manually set the icon size in a theme file?

All the Cinnamon themes I have seen change the colour, transparency and height of the the application launcher.
