There could be Welcome Screen statement regarding ufw utilization I agree. New users who came from windows (like me) would know the firewall is disabled by default. I thought it was always enabled. There already is a Welcome Screen statement for configuring the firewall at the bottom of First Steps...

Where are these settings stored? I would like to copy them to a fresh install without having to re-enter

It looks like grub is installed on the same drive as Vista which must be sda, and that is the drive that is being booted in bios or you wouldn't see grub.
I would have chosen sdb or sdc for grub.
Can you boot to the Mint installs from the grub you are seeing?

So use bios to set sda as the top of the boot order.
When you see your oem boot splash screen after power-up press and hold the left shift key
to force a grub display. Do you see it?

Right-click on an empty spot on the panel (aka taskbar)
From the popup choose 'Add to Panel'
Then scroll down to Mint Menu (advanced menu).
Highlight that choice and click the +Add button at the bottom.
You will need to move the Menu icon back to it's proper position.
