Perhaps what you want is to set your display as 'mirror' (both screens look the same), rather than 'extended' (what you seem to describe it as)?

I think Etcher is cool as well! Not sure if this addresses the OP's question, but I have successfully been able to pre-partition a USB stick, install GRUB2 onto it, use 'dd' command to copy an unmounted Linux install, and then point grub to the new partition for booting -- all using CLI commands.
